Annotation

Despite the use of betalaine pigments in the food industry, the molecular mechanisms of their action and their metabolism need to be studied. There is evidence of protector and antioxidant properties of pigments. It should be noted that a significant part of the work is devoted to the study of betanine beets, while the properties of amarantine and betaxanthins have not been sufficiently investigated, so the study of the properties of the pigment as a component of the antioxidant system of plants is relevant. The article presents the results of studying the dynamics of the change in the activity of antioxidant enzymes during the development of plants, comparative analysis of changes in activity of enzymes possessing antioxidant activity and content of betalaine pigments being antioxidants was carried out.
